Vegan Doughnuts with a Biscoff filling 🍩
I sometimes need a good home made sweet😋👇
INGREDIENTS
Makes 12 around donuts
1 package (1 1/2 tsp) active dry yeast
3/4 Cup + 2 tbsp of warm Non dairy milk
3 Cups of All Purpose Flour
1/4 Cup sugar
6 tbsp apple sauce
1/4 Cup + 2 tbsp warm any plant Milk (I used coconut milk)
1 tsp vanilla extract
1/2 Teaspoon of Salt
1/4 Cup melted vegan butter
Oil for frying (I used sunflower oil)
Cream filling:
200g of melted Lotus Biscoff spread
For the donuts:
1• Combine 1/2 cup warm non dairy milk and yeast, Mix then to the yeast mixture add 1/2 cup of all purpose flour mix well. Let sit for 10 mins.
2• Add 1/4 cup melted vegan butter, 1 1/2 cups of flour, salt, vanilla and 1/4 cup of sugar, apple sauce & the remaining warm milk. Mix with a wooden spoon then add in 1 cup of all purpose flour, mix as best you can the lightly flour a clean surface & dump the dough and knead the dough for 6 minutes, Add a few small spoonfuls of flour throughout kneading.
3• Clean that bowl well then grease with oil or vegan butter then Place the dough back into the bowl, cover with a kitchen bowl & let rise for 1 hr.
4• Choose a round, medium-sized cookie cutter or a wine glass to cut out the donuts.
5• Once the dough is doubled, spread a small handful of flour on your kitchen counter. Flatten the dough with a rolling pin and cut out donuts. Should be about 1/2 of an inch thick
6• Pour in about 4-5 cups of oil (I used sunflower oil) into a large pot. Use medium heat & check temperature of oil with deep fryer thermometer (350-365F)
7• Carefully place 2-3 doughnuts into the frying oil and fry about 1 min on both sides until golden. Remove doughnuts from the oil and place on a plate lined with paper towels.
8• Puncture a hole on the side of each doughnut then using a pastry bag with a tip, pipe in the melted Lotus Biscoff spread. Now take each doughnut and pass it through a bowl of iced sugar.
I used for the topping melted 70% dark chocolate, some Lotus Biscoff spread and ground Biscoff cookie🍪
